| L-Pectin: Potential “Pre-biotic” Agent from Sicilian Blood Orange Peel and Easy-to-Formulate Additive Pre-biotic agents help to promote the growth of beneficial bacteria in the human colon, and the generation of short-chain fatty acids. Recent scientific reports have indicated that L-Pectins are likely to be strong prebiotics, but research is continuing in an effort to substantiate this more fully.
The formulation of L-Pectins into new food and beverage products is a simple matter. Simply deliver the amount of concentrated L-pectin syrup that is needed for the targeted level of soluble fiber in a beverage, yogurt, or sauce product. There is no need to worry about pre-mixing, hydration, heating cycles, etc.; the concentrated syrup of 20 to 30% solids can be dispensed volumetrically into any new formulation during any mixing stage.
Different molecular weight properties may be desirable to control the mouthfeel, viscosity, and flowability of the final product, and the ideal molecular weight range will need to be determined by formulation experiments.
